About 13 million transactions per day on average with a functional network? Back in 2018 100 tx/s was done in short bursts but not able to keep it going for long.

All the developers have better things to do, we, plebs, don't know how to set up such a demonstration.

It costs money as well of course, about $600 for 1 million small transactions at current prices. But if it was a will for it could be done even if it was just icentivizing directly.
