I am actually running 3 full nodes on mainnet: BCHN, BU & BCHD, you can donate to my Electron Cash server if you want - connect to electroncash.de and click Help -> Donate to server

Are there instructions to set up and run a bch node that I can follow without trouble on Ubuntu Server?

Could try these:

https://bitcoincashnode.org/download/ubuntu

You may still need to open port 8333 like for any Bitcoin node. If you want to run from source need to see BCHN docs.

Is this the ChrisPacia one?

No, you're thinking about BCHD.

https://github.com/gcash/bchd/

You can of course also build & run that from source!
