That is why the payment processors that converts crypto to fiat is still the most popular for most merchants today.
In theory crypto should become more stable when adoption grows

Eventually, more merchants will choose to price items in BCH/Crypto and not convert it all to fiat if adoption grows enough.

that's true. but no one will hold crypto in a bear market and in a bull market they don't want to spend it. Stable currencies are needed before this experiment can succeed if you....

When people are buying crypto as it rises, they are choosing not to hold dollars in the dollar bear market.

I think this will not happen in the near future. Though it's good to have both. We have dollars on the blockchain already. Just not a scalable one.

But stablecoins are pointless imo. They lack the unique selling point of bitcoin, namely limited supply and scarcicity. Why not just use fiat then?

When there are fiat priced bonds issued with SLP, stable coins can be used to pay intrest on-chain.

I have got a roadmap for BCH.
0. Using SLP issue fiat priced bonds, stocks and etc.
1. Using SLP issue stable coin to support interest / dividend payment.
2. BCH become price currency.
